Veggie pizza rolls

Today I wanted to quickly share a recipe on these pizza rolls that we’ve made a couple times lately. They are so delicious and easy to make, and they are meat-free too. Our version is not vegan since we use regular grated cheese, but of course you can use vegan cheese instead. I’ve not had the best of luck with the vegan cheese selection we have in our local grocery store (yet), so until I find an alternative that actually tastes good too, these are the ingredients we use.

I dag ville jeg lige hurtig dele en opskrift på nogle pizzasnegle, som vi har bagt et par gange her på det sidste. De er super lækre og nemme at lave, og så er de helt uden kød. Vores version er ikke vegansk da vi bruger almindelig revet ost, men det kan naturligvis erstattes hvis man synes. Jeg har ikke haft det store held med vegansk ost i vores lokale butikker (endnu) synes jeg, så indtil der kommer et alternativ der rent faktisk smager godt, så er følgende altså de ingredienser vi bruger.



You need:

For the dough:

25g fresh yeast

2,5dl luke varm water

3 tbsp. Olive oil

1 tsp. Salt

100g graham flour (or another type of whole grain flour)

App. 400g plain wheat flour (the dough should be flexible but not too wet or too dry)

Filling:

3 potatoes

2 carrots

½-1 courgette

1 onion

1 garlic clove

Pizza sauce (we use a premade organic one)

Grated cheese

Oregano

Start prepping the dough. Dissolve the yeast in the water. I use my mixer but this is of course not a must if you don’t have one. Add salt and olive oil. Add the whole grain flour and then the plain flour little by little. You might not need all of it, so keep an eye on the consistency as you go. Like mentioned you want to make sure the dough I flexible and not sticky, yet not too dry either. Once you’re satisfied with the dough take it out, pour 1 tbsp. olive oil into the bowl and turn the dough in it until it’s covered with oil. This makes the dough even more flexible and easier to roll out and it gives a nice crispy crust. Leave it to rise for at least 1 hour covered with a kitchen cloth. You might even want to leave it to rise in the fridge for a few hours if you have time.

Prep the filling. Grate the veggies or if you’re lazy (like me, lol) put them into a foodprocessor. Fry them on a frying pan in a bit of olive oil and give it some salt and pepper. We also add a bit of organic allround spice, but you can use any other spices you love like thyme, rosemary, paprika or dried chili. Fry for around 5-10 minutes and take it off the heat.

Once the dough is done rising roll it out on the table. Spread out an even layer of pizza sauce and then add the grated cheese. Add the filling and spread it out evenly before rolling the dough. Cut slices of app. 3 cm and place the rolls on a plate with a baking sheet. I like to top up with a bit of extra cheese before baking them. Bake them at 220 degrees for around 10-12 minutes. Once out of the oven sprinkle with oregano and a bit of salt.

2,5dl lunken vand

3 spsk. Olivenolie

1 tsk. salt

100g grahamsmel (eller en anden type groft mel)

Ca. 400 g hvedemel (dejen skal være smidig men hverken for tør eller for våd)

Fyld:

3 kartofler

2 gulerødder

½ – 1 squash (afhængig af størrelse)

1 løg

1 fed hvidløg

Pizza sauce (vi køber den økologiske fra Urtekram)

Revet ost

Oregano

Start med at forberede dejen. Opløs gæren i vandet. Tilsæt salt og olivenolie. Jeg bruger som altid min røremaskine, men det behøves ikke hvis du ikke har én. Tilsæt groft mel og herefter hvedemel lidt efter lidt. Det er ikke sikkert du skal bruge helt så meget som der står i opskriften, så prøv dig frem. Som skrevet skal dejen være smidig og ikke klistret, men den må heller ikke blive for tør. Når du er tilfreds med konsistensen tager du dejen op af skålen, hælder ca. 1 spiseskefuld olivenolie i skålen og vender dejen i olien så den er dækket til med olie. Det gør dejen nemmere at rulle ud og arbejde med senere, og det giver også en dejlig sprød skorpe. Lad dejen hæve tildækket minimum 1 time på et lunt sted – eller endda længere tid på køl, hvis du har tid til det.

Forbered fyldet til pizzasneglene. Riv grøntsagerne på et rivejern eller smid hele molevitten i en foodprocessor, hvis du er doven (ligesom mig, lol). Lynsteg dem på en pande i lidt olivenolie og krydr med salt og peber. Vi krydrer også med allround krydderi fra Urtekram, så hvis du har nogle favorit krydderier som fx paprika, tørret chili, timian eller andet så vend det i blandingen. Steg i 5-10 minutter og tag panden af varmen.

Når dejen er hævet rulles den tyndt ud i en firkant. Fordel pizzasauce og ost nederst, og kom derefter grøntsagsfyldet på. Rul dejen sammen til en pølse og skær skiver af ca. 3 cm og placer sneglene på en bageplade. Jeg gemmer gerne lidt ost og topper dem med lidt ekstra inden de kommer i ovnen. Bag sneglene på 220 grader i 10-12 minutter. Når de kommer ud af ovnen drysses de med oregano og friskkværnet salt.

Last time I made these rolls I made a double portion, so that we now have a handful in our freezer. They are an amazing snack when you are on the go or just if you want something quick and easy for lunch or dinner. I’m sure they will be a lifesaver once the baby comes soon too, maybe even as a snack to pack into our hospital bag.

I’ve been wanting to experiment these kinds of classic (well, classic for Danes anyway) lunch faves in meat-free alternatives for a long time, especially now that we’re going to have a child. And these pizza rolls can be made in so many variations, depending on what veggies you add to them.

Sidst jeg lavede de her snegle lavede jeg en dobbeltportion, sådan så vi har en god håndfuld i fryseren. De er lækre at tage op løbende som mellemmåltid når man er på farten, eller til hurtig og let frokost eller aftensmad. Er sikker på de også bliver et hit når baby kommer inden så længe, måske endda som snack til at pakke med i hospitalstasken.

Har længe gerne villet eksperimentere med de her klassiske ”madpakke” favoritter i kødfrie versioner, nu da vi snart bliver en børnefamilie. Og pizzasneglene her kan jo laves i et hav af versioner, med forskellige typer af grøntsager.
